When I stopped picking the hardest difficulties in games that are “meant to be played” on harder difficulties I started enjoying them so much more.

I almost always play normal/recommended. I want to experience the game as the developer intended.
If hard added some unique element to the game, maybe it’d be worth it. But if it just makes enemies bullet sponges then nah, life’s too short for that shit.

Well, it depends on the game. Difficulty can also make the game more engaging, thrilling, and fulfilling. The feeling of overcoming a really difficult boss is really awesome. You can’t get that if you can just breeze through the whole game.
So I would say if the main focus of the game is the narrative, like an interactive movie, the difficulty is in the way of the story. In this case, I would agree with you, but in gameplay-focused games, the difficulty is basically the whole point of the game. So making it too easy makes the whole game pointless.

Most games version of “hard” mode is just higher numbers without any mechanical change.
Besides, overcoming an obstacle is a way to have fun for a lot of people too, especially when it is mixed with calm exploration, as you get enjoyment and fun from both facts that you had found something on your own and that you had managed to overcome the challenge before you.
