Surround works/doesn’t work?

I currently have my set up like this:

Xbox Series X – Hue Sync box – 2008 era Sony TV

Sony surround sound system – optical cable to tv (AND HDMI to TV to enable HDMI-CEC controlling since the IR blaster is gone.)

When I do this audio test, it hits each speaker perfectly like it should. But when I watch videos elsewhere it switches back to stereo only, coming back here shows it switched back to stereo. I can switch back to Dolby digital, but it reverts once I go to any video app. Any ideas?
