Yes, it’s playable on both consoles listed. Keep in mind Series S isn’t listed because it doesn’t take discs, only the Series X.
Differences will vary based on the game. You’ll have to do some digging on whatever games you’re concerned about.

Yes the game will run on both consoles, the reason they are labeled for the different consoles is cause they are optimized for that gen, this could mean better graphics for series X/S or 60fps on a game that used to be locked to 30 (or 120fps for a game that was locked to 60fps) it varys from game to game so I’d look into each one
