I loved Elden Ring, Legend of Zelda BOTW and TOTK, Fenyx Rising, Skyrim, Ghost of Tsushima.
Already tried but didn't like The Witcher 3, Horizon Zero Dawn, Subnautica.
I particularly enjoy beauty, variety, indoor, outdoor, rivers, lakes, sea, caves etc.
Any recommendations please?

I really enjoy the Spider-Man games. They are chill and have great Quality of Life.
Final Fantasy VII Rebirth is one of the greatest games I have ever played. Beautiful open world & Excellent combat based exploration.
Red Dead Redemption 2 is obviously up there.
Horizon Forbidden West is great. With amazing water graphics, great envirements & obviously flying over it.
Red dead redemption 2 is your game
Not a full open world but god of war 2018 and ragnarok should fit your criterias
Surely you haven’t finished the Elden Ring DLC already
Dragon’s Dogma 1 and 2
Assassin’s Creed Origins and Odyssey.
You could add Valhala to the list, but honestly, that game did not capture me like Origins and Odyssey did. Too large for its own good, too repetitive.
Origins is set in Egypt, which is a refreshing setting, while Odyssey is essentially Witcher 3 in Ancient Greece.
AC odyssey is fun. It’s not a great game but I really enjoyed it.

Assassin Creed Origin (Egypt) / Odyssey (Greece), Red Dead 1 et 2 (western with cowboy and sheriff, the second is pretty slow but they both are good). Spiderman and Shadow of the tomb raider.
