My Xbox One is stuck on an Insider Preview build, and because there’s no OSU1 / offline update available, I literally can’t use the console. It won’t update properly, I can’t roll back, and I can’t play anything. The console isn’t broken, it’s just locked behind Insider firmware with no recovery path.

To be fair they tell you about the potential bugs when you sign up for insider, and it doesn’t help the Xbox One is outdated – I wouldn’t be surprised if they don’t get around to fixing this issue.
Replacing or Upgrading the console and opting out of insider is what I would do; depending on your preference. You could also keep waiting for an update, depends on how quickly you wanna get back to gaming I suppose.
