I was curious about steam gems and it was something I never bothered with until today after 5 years on the platform and I was doing the maths on the gems sale price vs turning it into a pack and every time it wasn't worth it to turn the gems into a pack. So who is actually buying the gems off the market and are the people buying gems making a profit from it?

Money laundering.
I have no clue what are Steam gems, I use Steam to buy games.
I may be the odd person here, but I have been using Steam since it came out all those many years ago.
I never even knew gems were a thing, I don’t bother with trading cards, and I rarely even notice achievements.
The only extra stuff I do on steam is spend a few of my massive # of points I have accumulated to buy a boot animation or keyboard theme for my steam decks.
I rarely do any of the extra stuff during steam sales, or collect anything else.
I play games, and on occasion look at the MODS feature for a few of those games to expand on game I like.
