You can’t, it only counts on games from your actual steam library

Are you in the steam beta? It’s a new feature just added to it.
Also do note that it _ONLY_ track and store that information in the current installed client, it wont be stored or shown elsewhere, not even on your profile so there is like zero points beside you knowing how long you spent playing said game.

Theres an App called Millenium for both Windows and Linux that has a Plugin that Tracks non Steam Game playtime
